The first fermentation can vary in length depending on the profile we want to achieve in the cup and the variety of coffee we are processing.

The coffee cherries are pulped and placed in the tank with the mucilage for a second fermentation.

For the second fermentation, CO2 is injected to effectively control the final fermentation.

After the second fermentation, the coffee beans are taken to the washing area and the mucilage is partially removed before being transferred to African beds for drying.

The Producer

Sebastián Ramírez, a fourth-generation coffee producer, has been growing coffee for almost two decades. His work also has a community focus. El Placer Farms offers free consulting to coffee producers from whom Sebastián buys cherries to encourage them to produce the best coffee possible. El Placer Farms has been recognized in several international competitions; in 2023, our Wush Wush won the WCIGS championship, and in 2024, our Gesha White Honey won the Irish Barista Championship and also placed sixth in the WBC, to name just a few of El Placer’s achievements.

The Farm

The El Placer Farm Project began with Sebastián Ramírez, who is the fourth generation of coffee producers in his family.

His experience managing his family’s farm and working with coffee for more than fourteen years allowed him to develop this project, which began with his family farm and now includes farms owned by small coffee producers in Quindío and Huila.

The names of our partner farms are as follows: El Placer, Andalucía, La Sofía, La Carito, and La Paz.

“Regional coffee” is coffee that is grown in a specific geographical region and has unique characteristics of flavor, aroma, and body due to the climatic conditions, soil, and altitude in which it is grown.

Each coffee-producing region has its own coffee varieties, cultivation processes, and processing techniques that affect the flavor and quality of the coffee. For this reason, regional coffee is highly valued by coffee lovers for its distinctive and unique flavors and aromas.
